This refreshing Watermelon Fruit Salad with cherries and mint dressing is a vibrant summer dish perfect for hydration, flavor, and simplicity. Gluten-free, vegan, and keto-friendly in moderation, it’s a clean, naturally sweet option ideal for warm-weather meals, brunches, or snacks.
4 cups cubed seedless watermelon
1 cup pitted cherries, halved (fresh or frozen and drained)
1 tbsp fresh mint leaves, finely chopped
1 tbsp lime juice
1 tsp maple syrup (optional)
Pinch of sea salt
Optional Add-ins:
Blueberries, strawberries, kiwi, or mango
Cucumber slices
Crumbled feta cheese
Chia seeds or chopped almonds
Prep the fruit: Cube the watermelon and halve the cherries. Add both to a large mixing bowl.
Make the dressing: In a small bowl, mix lime juice, chopped mint, maple syrup (if using), and sea salt.
Toss salad: Pour the mint dressing over the fruit and gently toss to coat.
Chill and serve: Refrigerate for 15–30 minutes before serving. Garnish with extra mint if desired.
Use fresh mint for best flavor.
Skip maple syrup or use keto sweetener for low-carb option.
Add feta or basil for a sweet-savory twist.
Best served fresh. Store leftovers in the fridge for up to 2 days.
Avoid freezing—the fruit will become mushy once thawed.
