This refreshing Watermelon Fruit Salad with cherries and mint dressing is a vibrant summer dish perfect for hydration, flavor, and simplicity. Gluten-free, vegan, and keto-friendly in moderation, it’s a clean, naturally sweet option ideal for warm-weather meals, brunches, or snacks.

Ingredients

  • 4 cups cubed seedless watermelon

  • 1 cup pitted cherries, halved (fresh or frozen and drained)

  • 1 tbsp fresh mint leaves, finely chopped

  • 1 tbsp lime juice

  • 1 tsp maple syrup (optional)

  • Pinch of sea salt

Optional Add-ins:

  • Blueberries, strawberries, kiwi, or mango

  • Cucumber slices

  • Crumbled feta cheese

  • Chia seeds or chopped almonds

Instructions

  • Prep the fruit: Cube the watermelon and halve the cherries. Add both to a large mixing bowl.

  • Make the dressing: In a small bowl, mix lime juice, chopped mint, maple syrup (if using), and sea salt.

  • Toss salad: Pour the mint dressing over the fruit and gently toss to coat.

  • Chill and serve: Refrigerate for 15–30 minutes before serving. Garnish with extra mint if desired.

Notes

  • Use fresh mint for best flavor.

  • Skip maple syrup or use keto sweetener for low-carb option.

  • Add feta or basil for a sweet-savory twist.

  • Best served fresh. Store leftovers in the fridge for up to 2 days.

  • Avoid freezing—the fruit will become mushy once thawed.
