Description
These strawberry sugar cookies are soft, buttery, and bursting with fruity flavor. Rolled in homemade strawberry sugar for color, sparkle, and a pop of sweetness, they’re the perfect treat for gifting, cookie exchanges, or anytime baking.
Ingredients
For the Cookies:

2 ½ cups all-purpose flour

1 tsp baking soda

½ tsp salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 tsp vanilla extract

½ tsp almond extract (optional)

⅓ cup crushed freeze-dried strawberries or 1 tsp strawberry extract
For the Strawberry Sugar:

¼ cup granulated sugar

2 tbsp crushed freeze-dried strawberries
Instructions
1. Preheat and prep
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Mix dry ingredients
In a medium bowl, whisk together flour, baking soda, and salt.
3. Cream butter and sugar
In a large bowl, beat softened butter and sugar until light and fluffy, about 2–3 minutes.
4. Add wet ingredients
Mix in egg, vanilla, and almond extract (if using) until fully combined.
5. Add strawberry flavor
Stir in crushed freeze-dried strawberries or strawberry extract. Mix until pink streaks appear in the dough.
6. Combine and roll
Add dry ingredients gradually to wet ingredients. Stir until a soft dough forms. In a small bowl, mix ingredients for strawberry sugar. Scoop tablespoon-sized dough balls and roll in strawberry sugar to coat.
7. Bake and cool
Place dough balls on baking sheets and bake 9–11 minutes, until edges are set. Cool on baking sheet for 5 minutes, then transfer to wire racks to finish cooling.

Freeze-dried strawberries give natural flavor and color; extract works if needed.

To store: keep in airtight container at room temperature for up to 5 days or freeze for up to 2 months.
