Spooky Eyeball Truffles are the ultimate creepy treat for Halloween! These no-bake truffles feature rich chocolate centers, white candy coating, and eerie eyeball decorations that are perfect for parties, bake sales, and festive fun.

Ingredients

  • 1 package (14.3 oz) chocolate sandwich cookies (like Oreos)
  • 4 oz (½ block) cream cheese, softened
  • 10 oz white candy melts or white chocolate chips
  • Red food coloring or red decorating gel
  • Mini candy eyes or dark chocolate chips
  • Optional: colored food gel for iris (green, blue, etc.)
  • Optional: sprinkles, edible markers, or decorative pens

Instructions

  1. Make the truffle base: Pulse chocolate sandwich cookies in a food processor until finely crushed. Mix in softened cream cheese until fully combined.
  2. Form the truffles: Roll the mixture into tablespoon-sized balls and place on a parchment-lined baking sheet. Chill for 30 minutes or freeze for 15 minutes.
  3. Coat with white chocolate: Melt white candy melts or white chocolate chips in a microwave-safe bowl. Dip each chilled truffle into the coating and return to the tray.
  4. Decorate the eyeballs: Before the coating sets, press a candy eye or chocolate chip into the center. Add veins with red gel and iris colors with food gel or markers.
  5. Set and serve: Chill until fully set. Serve in Halloween cupcake liners or on a spooky platter.
