For the Tart Crust:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup cold water

For the Filling:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 4 ounces goat cheese, crumbled
  • 2 large eggs
  • ½ cup heavy cream

For Garnishing (Optional):

 

  • Fresh thyme sprigs
  • Shaved parmesan
  • Cherry tomatoes


Instructions

Step 1: Prepare the Tart Crust

  1. In a mixing bowl, whisk together flour and salt.
  2. Add cold, cubed butter and mix until the dough resembles coarse crumbs.
  3. Slowly add cold water, mixing until the dough comes together.
  4. Form the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.

Step 2: Pre-Bake the Crust

  1. Preheat oven to 375°F (190°C).
  2. Roll out the chilled dough on a floured surface and press into a 9-inch tart pan.
  3. Prick the bottom with a fork, line with parchment paper, and add baking weights.
  4. Bake for 15 minutes, remove parchment and weights, then bake another 5 minutes until lightly golden. Set aside.

Step 3: Prepare the Mushroom Filling

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Sauté onions until soft, then add garlic and mushrooms.
  3. Cook until mushrooms are golden brown, then season with salt, pepper, and thyme. Remove from heat.

Step 4: Assemble the Tart

  1. Sprinkle crumbled goat cheese over the pre-baked crust.
  2. Spread sautéed mushrooms on top.
  3. In a bowl, whisk eggs and heavy cream, then pour over the filling.

Step 5: Bake the Tart

  1. Bake at 375°F (190°C) for 25-30 minutes or until set and slightly golden.
  2. Let cool for 5-10 minutes before slicing.

Step 6: Garnish and Serve

 

  1. Garnish with fresh thyme, shaved parmesan, or cherry tomatoes.
  2. Serve warm and enjoy!
