These Raspberry Crumble Cookies are soft, buttery, and packed with sweet raspberry jam at the center, topped with a golden, crumbly streusel. Perfect for any season, these cookies are easy to make and bring a nostalgic homemade touch to any occasion.
✅ For the Cookie Base:
1 cup (125g) all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, softened
1/3 cup (65g) granulated sugar
1 teaspoon pure vanilla extract
✅ For the Crumble Topping:
1/3 cup (40g) all-purpose flour
2 tablespoons brown sugar
2 tablespoons cold unsalted butter, cut into small cubes
✅ For the Raspberry Filling:
1/3 cup high-quality raspberry jam
1️⃣ Prepare the Dough:
Whisk together flour, baking powder, and salt in a medium bowl. In a large bowl, beat butter and granulated sugar until light and fluffy. Mix in vanilla extract. Gradually add dry ingredients and mix until a soft dough forms.
2️⃣ Form the Cookies:
Scoop 1½ tablespoons of dough, roll into balls, and place on a parchment-lined baking sheet. Press a well into the center of each ball using your thumb or a small spoon.
3️⃣ Prepare the Crumble Topping:
In a small bowl, mix flour and brown sugar. Cut in cold butter until mixture resembles coarse crumbs.
4️⃣ Assemble the Cookies:
Fill each cookie well with about 1 teaspoon of raspberry jam. Sprinkle crumble topping over each cookie, covering both the jam and the edges.
5️⃣ Bake:
Preheat oven to 350°F (175°C). Bake for 14–16 minutes until edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
For extra flavor, add a teaspoon of lemon zest to the dough.
Try variations like strawberry or blueberry jam for a twist.
Chilling the dough before shaping helps the cookies keep their form.
If the crumble feels dry, add a splash of cold water.
