Description

This Parmesan Crusted Chicken With Mayo is golden, juicy, and made in the air fryer! A quick and easy dinner with minimal prep and big flavor thanks to a crispy parmesan-breadcrumb crust and a mayo-based coating that keeps the chicken moist and tender.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 1/2 cup mayonnaise

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon Italian seasoning

  • 1 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs (plain or panko)

  • Salt and black pepper, to taste

  • Olive oil spray (for crisping)

Instructions

  • Preheat air fryer: Set your air fryer to 375°F (190°C) and let it preheat.

  • Prep chicken: Pat chicken breasts dry. Season lightly with salt and pepper.

  • Mix mayo spread: In a small bowl, combine mayonnaise, garlic powder, onion powder, and Italian seasoning.

  • Prepare coating: In a shallow dish, mix grated Parmesan and breadcrumbs.

  • Coat chicken: Spread mayo mixture on one side of each chicken breast. Press mayo-coated side into the parmesan-breadcrumb mixture to coat.

  • Air fry: Place chicken in the air fryer basket (coated side up) and lightly spray with olive oil. Air fry for 14–18 minutes, or until internal temperature reaches 165°F (74°C).

  • Rest and serve: Let chicken rest for 2–3 minutes before serving. Enjoy warm with your favorite sides.

Notes

  • For extra flavor, add lemon zest or crushed red pepper to the mayo mix.

  • To make it low-carb, use crushed pork rinds and almond flour instead of breadcrumbs.

  • Works well with boneless chicken thighs too—just increase cook time by a few minutes.

  • Great for slicing over salads, serving with veggies, or stuffing into wraps.
