These fluffy Pancake Donuts are baked in a donut pan and ready in under 30 minutes. A fun twist on breakfast classics, they’re perfect for meal prep, school mornings, or brunch parties—easy to customize with toppings and kid-friendly too!

Ingredients

  • 1 ½ cups all-purpose flour (180g)
  • 3 ½ tsp baking powder (14g)
  • 1 tsp salt (5g)
  • 1 tbsp granulated sugar (12g)
  • 1 ¼ cups milk (300ml)
  • 1 large egg
  • 3 tbsp melted butter (45g)
  • 1 tsp vanilla extract (5ml)
  • Optional toppings: Maple syrup, powdered sugar, fresh berries, mini chocolate chips, whipped cream

Instructions

  1. Preheat & Prep: Preheat oven to 350°F (175°C) and grease donut pan with cooking spray or oil.
  2. Mix Dry Ingredients: In a large bowl, whisk flour, baking powder, salt, and sugar.
  3. Mix Wet Ingredients: In another bowl, whisk together milk, egg, melted butter, and vanilla.
  4. Make the Batter: Gradually combine wet and dry ingredients until just mixed. Do not overmix.
  5. Fill the Pan: Pipe or spoon batter into donut pan, filling each about ¾ full.
  6. Bake: Bake for 12–14 minutes or until firm to the touch and golden brown.
  7. Cool & Decorate: Let cool slightly in the pan, then transfer to rack. Add desired toppings.

Notes

  • Let the batter sit for 5 minutes before baking for fluffier results.
  • Don’t overfill the pan—this ensures a true donut shape.
  • Add-ins like blueberries or mini chocolate chips can be folded into the batter.
  • Store cooled donuts in an airtight container for up to 5 days or freeze for 2 months.
