Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix milk, egg, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients just until mixed—do not overmix.
  4. Add orange food coloring until you achieve a pumpkin-like shade.
  5. Heat and grease a nonstick skillet or griddle over medium heat.
  6. Pour or pipe the batter into pumpkin shapes with a small stem.
  7. Cook for 2–3 minutes, flip gently, then cook another 1–2 minutes.
  8. Let cool slightly, then decorate with syrup, Nutella, or fruit for jack-o’-lantern faces.

Notes

  • Use a squeeze bottle or piping bag for best pancake shaping results.
  • Let pancakes cool slightly before decorating to avoid melting the designs.
  • Add pumpkin pie spice or cinnamon for extra fall flavor.
  • Store leftovers in the fridge up to 3 days or freeze for up to 2 months.
  • Reheat gently in a toaster or microwave, or freeze with parchment in between.
  • Great activity for kids—let them decorate their own pancakes!
