Description

This Country Ranch Green Beans and Potatoes recipe is a flavorful, comforting side dish perfect for Easter dinner, potlucks, or any Southern-style meal. With crispy bacon, ranch seasoning, and tender vegetables, it’s a one-pan wonder that’s easy to prepare and always a crowd favorite.


Ingredients

  • 1 tablespoon butter

  • 4 slices bacon, chopped

  • 1 (1-ounce) packet dry ranch seasoning mix

  • pounds baby red potatoes, quartered

  • 1 pound fresh green beans, trimmed

  • ¼ cup water

  • Salt and pepper, to taste


Instructions

  • In a large skillet over medium heat, cook chopped bacon until crispy. Remove bacon and set aside, leaving the drippings in the pan.

  • Add butter to the bacon drippings, then stir in the quartered potatoes. Cook for about 10 minutes, stirring occasionally, until lightly browned.

  • Add the trimmed green beans and sprinkle with the ranch seasoning mix. Pour in the water and stir everything to coat.

  • Reduce heat to low, cover, and simmer for 10–15 minutes, or until the potatoes and green beans are fork-tender.

 

  • Stir in the cooked bacon, season with salt and pepper to taste, and serve warm.


Notes

  • For vegetarian version: Omit bacon and use olive oil instead of bacon drippings.

  • Use evenly sized potato pieces for consistent cooking.

  • Frozen green beans can be used in place of fresh—just thaw and drain first.
