Description
This Country Ranch Green Beans and Potatoes recipe is a flavorful, comforting side dish perfect for Easter dinner, potlucks, or any Southern-style meal. With crispy bacon, ranch seasoning, and tender vegetables, it’s a one-pan wonder that’s easy to prepare and always a crowd favorite.
Ingredients
-
1 tablespoon butter
-
4 slices bacon, chopped
-
1 (1-ounce) packet dry ranch seasoning mix
-
1½ pounds baby red potatoes, quartered
-
1 pound fresh green beans, trimmed
-
¼ cup water
-
Salt and pepper, to taste
Instructions
-
In a large skillet over medium heat, cook chopped bacon until crispy. Remove bacon and set aside, leaving the drippings in the pan.
-
Add butter to the bacon drippings, then stir in the quartered potatoes. Cook for about 10 minutes, stirring occasionally, until lightly browned.
-
Add the trimmed green beans and sprinkle with the ranch seasoning mix. Pour in the water and stir everything to coat.
-
Reduce heat to low, cover, and simmer for 10–15 minutes, or until the potatoes and green beans are fork-tender.
-
Stir in the cooked bacon, season with salt and pepper to taste, and serve warm.
Notes
-
For vegetarian version: Omit bacon and use olive oil instead of bacon drippings.
-
Use evenly sized potato pieces for consistent cooking.
-
Frozen green beans can be used in place of fresh—just thaw and drain first.
-
Easily doubled for potlucks or holidays.
