Ingredients

For the Fries:

  • 3 large russet potatoes (or frozen French fries)
  • 3 cups vegetable oil (for frying, if using fresh potatoes)
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Cheese Sauce:

  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 tablespoon butter
  • ½ cup heavy cream
  • ½ teaspoon garlic powder

For the Cajun Seasoning:

  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper (adjust for spice preference)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt

For Toppings:

 

  • ¼ cup ranch dressing
  • 2 tablespoons chopped green onions
  • ¼ teaspoon red pepper flakes (optional, for extra spice)

Instructions

  • Prepare the Fries:

    • If using fresh potatoes, wash, peel, and cut them into thin strips.
    • Soak them in cold water for 30 minutes to remove excess starch.
    • Heat oil in a deep fryer or pan to 350°F (175°C).
    • Drain and pat the fries dry with a paper towel. Fry in batches for 4-5 minutes until golden and crispy.
    • Remove fries from oil, drain on a paper towel, and sprinkle with salt and black pepper.
  • Make the Cheese Sauce:

    • In a saucepan, melt butter over low heat.
    • Add heavy cream and stir until warm.
    • Slowly mix in shredded cheddar and Monterey Jack cheese, stirring continuously until smooth.
    • Add garlic powder and stir until fully combined.
  • Assemble the Voodoo Fries:

    • Place the crispy fries on a serving plate.
    • Drizzle the warm cheese sauce generously over the fries.
    • Sprinkle the Cajun seasoning evenly over the top.
    • Drizzle with ranch dressing and garnish with chopped green onions.
    • Add red pepper flakes if you want extra spice.

  • For extra crispiness, double-fry the potatoes: Fry once at 325°F (163°C), let them cool, then fry again at 375°F (190°C).
