This Apple Crumble Cheesecake combines creamy cheesecake, warm spiced apple pie filling, and a buttery cinnamon crumble topping. A stunning fall dessert perfect for Thanksgiving or any cozy gathering.
Ingredients
Crust
✅ 1 ½ cups (150g) graham cracker crumbs
✅ ⅓ cup (70g) granulated sugar
✅ ½ cup (113g) melted butter
Cheesecake Filling
✅ 3 blocks (680g) cream cheese, softened
✅ 1 cup (200g) granulated sugar
✅ 1 tsp vanilla extract
✅ 3 large eggs
✅ ⅓ cup (80ml) sour cream
✅ ⅓ cup (80ml) heavy cream
Apple Pie Filling
✅ 3 medium apples (peeled and diced)
✅ 1 tbsp lemon juice
✅ ¼ cup (50g) brown sugar
✅ 1 tsp cinnamon
✅ 1 tbsp cornstarch
✅ 2 tbsp water
Crumble Topping
✅ ½ cup (60g) all-purpose flour
✅ ¼ cup (50g) brown sugar
✅ 1 tsp cinnamon
✅ ¼ cup (56g) unsalted butter, cold and cubed
Instructions
1️⃣ Prepare the Crust
Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment and grease the sides.
Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes. Let cool.
2️⃣ Make the Cheesecake Filling
Beat cream cheese until smooth. Add sugar and mix well. Add vanilla, then eggs one at a time.
Mix in sour cream and heavy cream. Pour over the crust and smooth the top.
3️⃣ Cook the Apple Pie Filling
In a saucepan, cook apples, lemon juice, brown sugar, and cinnamon for 5–6 minutes.
Add cornstarch slurry (cornstarch + water) and stir until thickened. Let cool.
Spread over the cheesecake filling.
4️⃣ Add the Crumble Topping
Combine flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
Sprinkle evenly over the apples.
5️⃣ Bake the Cheesecake
Bake at 325°F for 60–70 minutes until edges are set and center slightly jiggles.
Turn off oven, crack door, and cool inside for 1 hour.
Then cool on rack and refrigerate for 6+ hours or overnight before serving.
