Ingredients

For the Chicken:

✅ 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
✅ ½ tsp garlic powder
✅ ½ tsp smoked paprika
✅ ½ tsp salt
✅ ¼ tsp black pepper
✅ 1 tbsp olive oil

For the Hot Honey Glaze:

✅ ⅓ cup (80ml) honey
✅ 1 tbsp hot sauce (adjust to your spice preference)
✅ 1 tsp red pepper flakes
✅ 1 tbsp apple cider vinegar
✅ 1 tbsp unsalted butter

For the Bowl Base:

✅ 2 cups cooked rice (white, brown, or jasmine rice) or quinoa
✅ 1 cup mixed greens or spinach

Toppings (optional):

✅ ½ cup diced cucumbers
✅ ½ cup shredded carrots
✅ ¼ cup sliced green onions
✅ Avocado slices
✅ Sesame seeds or chopped peanuts for garnish

Instructions

1️⃣ Season the Chicken:

  • Toss the chicken pieces with garlic powder, smoked paprika, salt, and black pepper in a bowl until evenly coated.

2️⃣ Cook the Chicken:

  • Heat olive oil in a large skillet over medium heat.
  • Add the chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and fully cooked.
  • Remove the chicken from the skillet and set aside.

3️⃣ Make the Hot Honey Glaze:

  • In the same skillet, reduce heat to low.
  • Add honey, hot sauce, red pepper flakes, apple cider vinegar, and butter.
  • Stir until the butter melts and the mixture is well combined. Let it simmer for 2-3 minutes to thicken slightly.

4️⃣ Coat the Chicken:

  • Return the cooked chicken to the skillet and toss it in the hot honey glaze until fully coated. Remove from heat.

5️⃣ Assemble the Bowls:

  • Start with a base of cooked rice or quinoa in each bowl. Add a layer of mixed greens, then top with the hot honey chicken.
  • Arrange cucumbers, shredded carrots, avocado slices, and green onions around the chicken.
