Ingredients

  • Chicken Wings: 2 pounds (drumettes and flats).
  • Baking Powder: 1 tablespoon.
  • Salt and Pepper: To taste.

For the Honey Lemon Pepper Glaze:

  • Honey: 1/4 cup.
  • Lemon Juice: 2 tablespoons, freshly squeezed.
  • Lemon Zest: 1 teaspoon.
  • Black Pepper: 1 teaspoon, freshly cracked.
  • Butter: 2 tablespoons.

Instructions

  1. Prepare the Wings:
    • Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
    • Pat chicken wings dry and toss them with baking powder, salt, and a pinch of pepper.
  2. Bake the Wings:
    • Arrange wings on the wire rack in a single layer.
    • Bake for 40-45 minutes, flipping halfway, until golden and crispy.
  3. Make the Glaze:
    • In a saucepan, melt butter over low heat.
    • Stir in honey, lemon juice, lemon zest, and black pepper. Simmer for 1-2 minutes until slightly thickened.
  4. Coat the Wings:
    • Transfer baked wings to a mixing bowl and pour the glaze over them. Toss gently until evenly coated.
  5. Serve and Garnish:
    • Serve immediately with additional lemon zest or black pepper if desired.
