Description

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • ¾ cup chopped walnuts

For the Cream Filling:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

For the Topping:

 

  • ¼ cup chopped walnuts (for garnish)
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  • Prepare the Cake Batter: Preheat oven to 350°F (175°C). Grease an 8-inch or 9-inch cake pan. In a bowl, mash ripe bananas until smooth. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

  • Mix Wet Ingredients: Cream butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, then mix in mashed bananas and vanilla extract.

  • Combine & Fold in Walnuts: Gradually add dry ingredients to wet mixture, alternating with milk. Gently fold in chopped walnuts.

  • Bake the Cake: Pour batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool on a wire rack.

  • Prepare the Cream Filling: Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  • Assemble the Cake: Once the cake is completely cool, slice it in half horizontally. Spread whipped cream filling on the bottom half, then place the top half over it.

 

  • Garnish & Serve: Sprinkle with chopped walnuts and powdered sugar. Chill for 30 minutes before serving for the best texture.
