Ingredients

  • 1 pound elbow macaroni (or pasta of your choice)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper, to taste
  • Green food coloring (gel preferred)
  • Candy eyeballs or sliced black olives, for monster eyes
  • Sliced mozzarella, provolone, or cheese sticks (for teeth or accents)
  • Black olives or red bell pepper (for monster mouths or creepy decor)
  • Optional Add-ins: broccoli, spinach, beet-colored pasta, carrots, peas

Instructions

  1. Cook the Pasta: Boil pasta in salted water according to package instructions. Drain and set aside.
  2. Make the Cheese Sauce: Melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually add milk, whisking until smooth and thickened. Stir in cheese, salt, and pepper until melted and creamy.
  3. Add Food Coloring: Add green food coloring to the cheese sauce and stir until monster-green.
  4. Mix: Combine pasta and cheese sauce until evenly coated.
  5. Decorate: Transfer to a serving dish. Add candy eyes or olive slices for eyeballs. Use cheese or bell pepper for monster features.
  6. Serve: Serve warm, or keep in a 200°F oven until ready. Re-decorate after reheating if needed.

Notes

  • Use mozzarella rounds or olives for savory monster eyes.
  • Add beet juice or black pasta for creepy color contrast.
  • Store leftovers in the fridge for up to 3 days.
  • Reheat with a splash of milk and add fresh toppings after warming.
  • Great for lunchboxes, parties, or Addams Family movie nights!
