Ingredients

  • 1 large pizza dough ball (300–350g, homemade or store-bought)
  • 1 large head garlic
  • 1 tbsp olive oil (plus extra for drizzling)
  • 1 cup fresh baby spinach
  • 3/4 cup ricotta cheese
  • 1/2 cup crumbled feta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 tsp dried oregano
  • Salt & freshly cracked pepper, to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Roast the garlic: Preheat oven to 200°C (400°F). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast 35–40 minutes until soft and golden. Squeeze cloves into a bowl and mash.
  2. Prepare the dough: Roll out pizza dough into a 12-inch round. Place on parchment or a preheated pizza stone.
  3. Make the white base: Spread roasted garlic over dough. Add dollops of ricotta and spread gently. Season with oregano, salt, and pepper.
  4. Add toppings: Layer spinach evenly. Add mozzarella and crumbled feta. Sprinkle red pepper flakes if using.
  5. Bake: Bake at 220°C (430°F) for 12–15 minutes until crust is golden and cheese is bubbling.
  6. Serve: Rest 2–3 minutes. Drizzle olive oil or add herbs. Slice and enjoy warm.
