These Easy St. Patrick’s Day Cookies are festive, fun, and simple to make! With a vibrant green color and delicious flavor, they’re the perfect treat for St. Patrick’s Day parties, school events, or a fun way to celebrate at home. Soft, chewy, and customizable with chocolate chips or sprinkles, these shamrock cookies will bring a touch of Irish luck to your kitchen!

Ingredients

Wet Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp mint extract (optional, for a minty touch!)
  • Green food coloring (adjust to desired shade)

Dry Ingredients:

  • 2 ½ cups (315g) all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt

Optional Add-ins:

 

  • ½ cup white or dark chocolate chips
  • Green sprinkles or themed decorations

Instructions

1️⃣ Prepare the Cookie Dough

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs, vanilla extract, and mint extract, then mix until smooth.

2️⃣ Mix in Dry Ingredients & Color

  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add dry ingredients to wet mixture, stirring until combined.
  • Mix in green food coloring until evenly distributed.
  • Fold in chocolate chips, if using.

3️⃣ Shape & Bake

  • Scoop tablespoon-sized dough balls onto the prepared baking sheets.
  • Flatten slightly and top with sprinkles or decorations.
  • Bake for 8–10 minutes, until the edges are set but the centers remain soft.
  • Let cookies cool for 5 minutes, then transfer to a wire rack.

4️⃣ Decorate & Serve

 

  • Drizzle with melted white chocolate or add extra sprinkles for a festive touch.
  • Serve fresh or store for later!

Notes

  • For a bolder green, add more food coloring gradually.
  • For a mintier taste, increase mint extract to 1 tsp.

 

  • For extra chewiness, slightly underbake the cookies and let them cool on the baking sheet.
