Ingredients

  • 4 large russet potatoes (scrubbed clean)

  • 1½ cups fresh spinach (chopped)

  • 1 cup mushrooms (finely diced; cremini or white button)

  • 3 tablespoons butter

  • ½ cup sour cream or Greek yogurt

  • ¾ cup shredded cheddar cheese (or blend)

  • 2 tablespoons cream cheese (optional, for extra richness)

  • Salt and black pepper (to taste)

  • ½ teaspoon garlic powder or 2 cloves minced garlic

  • Olive oil (for roasting potatoes)

 

  • Optional garnish: paprika, chopped chives, extra cheese

Instructions

1️⃣ Bake the potatoes
Preheat oven to 400°F (200°C). Pierce potatoes with a fork, rub with olive oil, sprinkle with salt, and bake directly on the rack for 45–60 minutes until tender.

2️⃣ Prepare the filling
While potatoes bake, sauté diced mushrooms in butter until golden. Add spinach and cook until wilted. Season with salt, pepper, and garlic powder.

3️⃣ Scoop and mash
Cool baked potatoes slightly, then slice in half lengthwise. Scoop out the insides, leaving a thin shell. Mash the potato flesh with sour cream, cream cheese (if using), and shredded cheese until creamy.

4️⃣ Combine
Fold the sautéed spinach and mushrooms into the mashed potato mixture.

5️⃣ Stuff the shells
Spoon the filling back into the potato skins, mounding slightly.

6️⃣ Bake again
Return stuffed potatoes to the oven and bake for 15–20 minutes until heated through and lightly golden.

 

7️⃣ Serve
Garnish with paprika, chives, or extra cheese. Serve hot!
