This Sloppy Joe Casserole takes the classic sandwich and turns it into a one-dish, cheesy, comforting dinner that’s perfect for busy weeknights. With savory ground beef, sweet and tangy sloppy joe sauce, and a golden biscuit or crescent topping, this dish is easy to make and even easier to love.

Ingredients

  • 1 pound ground beef

  • 1 small onion, finely chopped

  • 1 green bell pepper, chopped (optional)

  • 1 can (15 oz) sloppy joe sauce (or homemade)

  • Salt and pepper, to taste

  • Optional seasonings: ½ tsp garlic powder, paprika, or chili powder

  • 1 cup shredded cheddar cheese

  • 1 can refrigerated biscuit dough or crescent rolls

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.

  • In a large skillet over medium heat, cook ground beef until browned. Drain any excess grease.

  • Add onion and bell pepper (if using) and sauté until softened, about 3–4 minutes.

  • Stir in sloppy joe sauce and optional seasonings. Simmer for 5–10 minutes to thicken slightly.

  • Transfer meat mixture to the prepared casserole dish and spread evenly.

  • Sprinkle shredded cheddar cheese over the meat layer.

  • Top with biscuit or crescent roll dough, spacing evenly.

  • Bake uncovered for 15–20 minutes, or until biscuits are golden and cheese is bubbling.

  • Let cool for 5 minutes before serving. Enjoy!

Notes

  • Swap biscuit topping for tater tots or cornbread batter for variation.

  • Add in corn, mushrooms, or spinach to stretch the dish and boost nutrition.

  • Leftovers can be stored in the fridge for up to 4 days or frozen in individual portions.

  • Great make-ahead meal: assemble and refrigerate up to 24 hours before baking.

  • For a crispy top, brush biscuits lightly with melted butter before baking.
