This Sloppy Joe Casserole takes the classic sandwich and turns it into a one-dish, cheesy, comforting dinner that’s perfect for busy weeknights. With savory ground beef, sweet and tangy sloppy joe sauce, and a golden biscuit or crescent topping, this dish is easy to make and even easier to love.
1 pound ground beef
1 small onion, finely chopped
1 green bell pepper, chopped (optional)
1 can (15 oz) sloppy joe sauce (or homemade)
Salt and pepper, to taste
Optional seasonings: ½ tsp garlic powder, paprika, or chili powder
1 cup shredded cheddar cheese
1 can refrigerated biscuit dough or crescent rolls
Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
In a large skillet over medium heat, cook ground beef until browned. Drain any excess grease.
Add onion and bell pepper (if using) and sauté until softened, about 3–4 minutes.
Stir in sloppy joe sauce and optional seasonings. Simmer for 5–10 minutes to thicken slightly.
Transfer meat mixture to the prepared casserole dish and spread evenly.
Sprinkle shredded cheddar cheese over the meat layer.
Top with biscuit or crescent roll dough, spacing evenly.
Bake uncovered for 15–20 minutes, or until biscuits are golden and cheese is bubbling.
Let cool for 5 minutes before serving. Enjoy!
Swap biscuit topping for tater tots or cornbread batter for variation.
Add in corn, mushrooms, or spinach to stretch the dish and boost nutrition.
Leftovers can be stored in the fridge for up to 4 days or frozen in individual portions.
Great make-ahead meal: assemble and refrigerate up to 24 hours before baking.
For a crispy top, brush biscuits lightly with melted butter before baking.
