This Pancake Mix Sausage Casserole is the ultimate breakfast comfort food—easy to prep, hearty enough to feed a crowd, and full of sweet and savory flavor. With fluffy pancake layers and savory sausage baked in one dish, it’s the perfect no-fuss solution for busy mornings, weekend brunches, or make-ahead meal prep.

Ingredients

  • 1 pound breakfast sausage (pork, turkey, or chicken), cooked and crumbled

  • 2 cups pancake mix (like Bisquick or Krusteaz)

  • 1½ cups milk

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 tablespoons maple syrup (optional)

  • Salt and pepper, to taste

 

  • Optional Add-ins:

    • ½ cup shredded cheese

    • ½ cup fresh or frozen blueberries

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.

  • In a skillet over medium heat, cook and crumble sausage until browned and no longer pink. Drain excess fat.

  • In a large bowl, whisk together pancake mix, milk, eggs, vanilla extract, and maple syrup until just combined.

  • Fold in cooked sausage and any optional add-ins like cheese or fruit.

  • Pour mixture into the prepared baking dish and spread evenly.

  • Bake for 35–40 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.

 

  • Let cool 5–10 minutes before slicing. Serve warm with extra syrup if desired.

Notes

  • To make ahead, prepare the casserole, cover, and refrigerate overnight. Bake in the morning, adding 5–10 minutes to the cook time.

  • For a sweet twist, swirl in cinnamon sugar or top with crushed pecans before baking.

  • Great for freezing: Slice, wrap individually, and freeze for up to 2 months.

 

  • Reheat in microwave or oven until warmed through.
