This Pancake Mix Sausage Casserole is the ultimate breakfast comfort food—easy to prep, hearty enough to feed a crowd, and full of sweet and savory flavor. With fluffy pancake layers and savory sausage baked in one dish, it’s the perfect no-fuss solution for busy mornings, weekend brunches, or make-ahead meal prep.
1 pound breakfast sausage (pork, turkey, or chicken), cooked and crumbled
2 cups pancake mix (like Bisquick or Krusteaz)
1½ cups milk
2 large eggs
1 teaspoon vanilla extract
2 tablespoons maple syrup (optional)
Salt and pepper, to taste
Optional Add-ins:
½ cup shredded cheese
½ cup fresh or frozen blueberries
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
In a skillet over medium heat, cook and crumble sausage until browned and no longer pink. Drain excess fat.
In a large bowl, whisk together pancake mix, milk, eggs, vanilla extract, and maple syrup until just combined.
Fold in cooked sausage and any optional add-ins like cheese or fruit.
Pour mixture into the prepared baking dish and spread evenly.
Bake for 35–40 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
Let cool 5–10 minutes before slicing. Serve warm with extra syrup if desired.
