Ingredients

  • 8 oz elbow macaroni, cooked and drained

  • 6 hard-boiled eggs, chopped

  • ¾ cup mayonnaise

  • 1 tbsp yellow mustard

  • 1 tsp white vinegar

  • 1 tsp sugar

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp paprika (plus more for garnish)

  • Salt and black pepper, to taste

  • Optional: diced celery, chopped green onions, sweet relish

Instructions

  • Boil elbow macaroni until al dente, then rinse with cold water and drain.

  • In a large bowl, mix mayonnaise, mustard, vinegar, sugar, garlic powder, onion powder, paprika, salt, and pepper.

  • Gently fold in cooked macaroni and chopped eggs.

  • Add optional celery, green onions, or relish if using.

  • Stir until everything is well combined.

  • Chill in the refrigerator for at least 1 hour before serving.

  • Sprinkle with extra paprika before serving.

Notes

For the creamiest texture, use full-fat mayonnaise and chill the salad well before serving.

Allowing the salad to rest in the fridge helps the flavors blend beautifully.

If you prefer a smoky twist, substitute regular paprika with smoked paprika.

Adjust the consistency by adding a little more mayo or a splash of vinegar just before serving.
Feel free to swap elbow macaroni for other small pasta shapes like shells or rotini for variety.
