Description

This Snickerdoodle Cobbler is a warm, cinnamon-sugar dessert with a gooey caramelized bottom and soft cake topping. Easy to make and perfect for family gatherings, holidays, or a comforting treat any time of year!

Ingredients

Scale

For the Batter:

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • ½ cup whole milk
  • 1 teaspoon vanilla extract

For the Topping:

  • ½ cup brown sugar, packed
  • 1 ½ teaspoons cinnamon
  • 1 ½ cups hot water

Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
    • Lightly grease a 9×13-inch baking dish to prevent sticking.
  • Prepare the Batter:

    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a separate bowl, mix the melted butter, sugar, milk, and vanilla extract until smooth.
    • Gradually combine the wet and dry ingredients, stirring until a smooth batter forms.
  • Assemble the Cobbler:

    • Pour the batter evenly into the greased baking dish.
    • In a small bowl, mix the brown sugar and cinnamon, then sprinkle the mixture evenly over the batter.
    • Carefully pour the hot water over the top—do not stir.
  • Bake the Cobbler:

    • Bake for 40–45 minutes, or until the top is golden brown and set while the bottom remains gooey.

  • Cool and Serve:

    • Allow the cobbler to cool slightly before serving.
    • Serve warm with vanilla ice cream or whipped cream for extra indulgence.

Notes

  • For extra richness, add a swirl of cream cheese before baking.
  • Add diced apples for a fruity twist.

  • To store leftovers, refrigerate in an airtight container for up to 4 days or freeze for 2 months.
