This Cheddar Bay Biscuit Seafood Pot Pie is the ultimate comfort food mash-up—think creamy seafood chowder meets buttery, cheesy biscuits, all baked into one golden, bubbling casserole. Packed with shrimp, crab, and scallops, and topped with Red Lobster-style cheddar biscuits, this cozy dish is perfect for seafood lovers and anyone craving a rich, crowd-pleasing dinner.

Ingredients

For the Filling:

  • 2 tablespoons butter

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1/4 cup all-purpose flour

  • 1 1/2 cups seafood stock (or chicken broth)

  • 1/2 cup heavy cream

  • 1 cup cooked shrimp, chopped

  • 1 cup lump crab meat

  • 1/2 cup scallops, chopped (optional)

  • 1 cup frozen peas and carrots

  • 1/2 teaspoon Old Bay seasoning

  • Salt and pepper, to taste

For the Biscuit Topping:

 

  • 1 package (11 oz) Cheddar Bay Biscuit Mix

  • 1/2 cup shredded sharp cheddar cheese

  • 3/4 cup cold water

  • 1/4 cup melted butter

  • 1/2 teaspoon garlic powder

  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  • Make the Filling: Preheat oven to 400°F (200°C). In a large skillet, melt butter over medium heat. Add diced onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 30 seconds more.

  • Sprinkle flour over onion mixture and stir well. Cook for 1–2 minutes. Slowly whisk in seafood stock, then heavy cream. Cook, stirring constantly, until the mixture thickens, about 4–5 minutes.

  • Fold in shrimp, crab, scallops (if using), peas and carrots, Old Bay seasoning, salt, and pepper. Simmer for 2–3 minutes, then remove from heat. Pour mixture into a greased 9×13-inch baking dish.

  • Prepare Biscuit Topping: In a mixing bowl, combine biscuit mix, cheddar cheese, and water. Stir until just combined. Drop large spoonfuls of the biscuit dough over the seafood filling.

  • Bake uncovered for 18–20 minutes, or until biscuits are golden and cooked through.

  • Optional Garlic Butter Topping: Mix melted butter with garlic powder and parsley. Brush over the baked biscuits immediately after removing from the oven.

 

  • Let cool slightly before serving. Enjoy warm!

Notes

  • You can substitute seafood for just shrimp or crab depending on availability.

  • Add a pinch of cayenne if you want a kick!

 

  • Store leftovers covered in the fridge for up to 3 days.
