This cowboy casserole recipe is a comforting, family-friendly dinner made with seasoned ground beef, corn, creamy mushroom soup, melted cheddar, and crispy tater tots. Perfect for busy weeknights and meal prep!

Ingredients

  • 1 lb ground beef

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 can (15 oz) corn, drained

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup sour cream

  • 1 cup shredded cheddar cheese

  • 1 bag (32 oz) frozen tater tots

  • Salt and pepper, to taste

 

  • Optional: chopped green onions or parsley, for garnish

Instructions

1. Preheat the oven
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

2. Cook the beef mixture
In a skillet over medium heat, brown the ground beef. Add onion and garlic, cooking until soft. Drain any excess fat.

3. Add the creamy base
Stir in the corn, cream of mushroom soup, sour cream, salt, and pepper. Mix until well combined.

4. Assemble the casserole
Spread the beef mixture evenly into the prepared dish. Sprinkle with shredded cheddar cheese, then arrange frozen tater tots in a single layer on top.

 

5. Bake
Bake uncovered for 35–40 minutes, or until tater tots are golden and crispy. Garnish with green onions or parsley if desired. Serve hot.
