Ingredients
Dry ingredients:

1½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon ground nutmeg

Wet ingredients:

1 large egg

½ cup granulated sugar

½ cup brown sugar

½ cup vegetable oil (or melted butter)

1 cup eggnog (store-bought or homemade)

1 teaspoon vanilla extract
Optional mix-ins:

½ cup chopped pecans or walnuts
Glaze (optional):

½ cup powdered sugar

2–3 tablespoons eggnog

Instructions

Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment.

In a medium bowl, whisk together flour, baking powder, salt, nutmeg, and cinnamon.

In a large bowl, whisk egg, sugars, oil, eggnog, and vanilla until well combined.

Gradually stir dry ingredients into wet mixture until just combined. Do not overmix.

Fold in optional nuts if using.

Pour batter into prepared pan. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in pan for 10–15 minutes, then transfer to a wire rack.

For glaze: Mix powdered sugar with eggnog until smooth. Drizzle over cooled loaf and dust with nutmeg if desired.
