Ingredients

  • 1/2 cup (113 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (40 g) unsweetened cocoa powder
  • 1/2 cup (60 g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2–3 cups (300–450 g) fresh strawberries, hulled and sliced
  • 1 cup (170 g) semi-sweet chocolate chips
  • 1/4 cup (60 ml) heavy cream
  • Optional: additional sliced strawberries or white chocolate drizzle for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment, leaving overhang for easy removal.
  2. In a large bowl, whisk together melted butter and sugar. Beat in eggs one at a time, then add vanilla extract.
  3. In a separate bowl, sift cocoa powder, flour, salt, and baking powder. Gradually fold dry ingredients into wet mixture just until combined.
  4. Spread brownie batter evenly in prepared pan. Bake 20–25 minutes, until a toothpick comes out with moist crumbs. Cool completely.
  5. Arrange sliced strawberries evenly over cooled brownies.
  6. In a heatproof bowl over simmering water, melt chocolate chips and heavy cream together until smooth. Pour over strawberries and spread evenly.
  7. Chill in refrigerator at least 30 minutes to set before slicing. Garnish with additional strawberries or drizzle of white chocolate if desired.

  • Use fresh, firm strawberries for best results.
  • Pat strawberries dry before layering to prevent excess moisture.
  • Don’t overbake the brownie base — it should remain fudgy.
