This Chicken Meatloaf is a lighter, flavorful twist on the classic comfort food. Made with ground chicken, garlic, parmesan, and herbs, it’s juicy, cheesy, and satisfying—perfect for weeknights, family dinners, or meal prep. A must-try addition to your yummy chicken recipes collection.

Ingredients

  • 1 ½ pounds ground chicken
  • ½ cup breadcrumbs (panko or Italian style)
  • ½ cup grated parmesan cheese
  • 1 egg
  • 2 garlic cloves, minced
  • ½ cup onion, finely chopped
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • ¼ cup ketchup (for glaze)
  • 1 tablespoon olive oil (for brushing, optional)

Instructions

  1. Preheat Oven: Set oven to 375°F (190°C). Grease a loaf pan or line with parchment.
  2. Mix Ingredients: In a large bowl, combine ground chicken, breadcrumbs, parmesan, egg, onion, garlic, and seasonings. Mix gently.
  3. Shape the Loaf: Form mixture into a loaf in the pan or shape freeform on a baking sheet.
  4. Add Glaze: Spread ketchup evenly on top for a glossy finish.
  5. Bake: Cook for 45–55 minutes, until the internal temperature reaches 165°F (74°C).
  6. Rest & Serve: Let rest 5–10 minutes before slicing. Serve with your favorite sides.

Notes

  • Add finely grated vegetables like zucchini or carrots for extra moisture.
  • Do not overmix the chicken—it can make the loaf dense.
  • Use a meat thermometer to ensure it’s fully cooked at 165°F.
  • Let it rest before slicing to keep juices inside.
  • Try BBQ sauce or marinara instead of ketchup for different flavors.
