This Crock Pot Hamburger Potato Casserole is the ultimate comfort food with layers of sliced potatoes, ground beef, cheese, and a creamy mushroom sauce, slow-cooked to perfection. It’s an easy family meal, budget-friendly, and great for weeknights or potlucks.

Ingredients

  • 1 lb ground beef
  • 6–8 medium potatoes, peeled and sliced thin
  • 1 medium onion, diced
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • Salt and pepper, to taste
  • Garlic powder (optional)
  • Fresh parsley, for garnish (optional)
  • Optional Add-ins:
  • Frozen peas or corn
  • Diced green bell pepper
  • Crumbled cooked bacon

Instructions

  1. Brown the Ground Beef: In a skillet over medium heat, brown the ground beef with salt, pepper, and garlic powder (if using). Drain excess grease.
  2. Prepare the Sauce: In a bowl, mix the cream of mushroom soup and milk until smooth.
  3. Layer the Ingredients: Spray the slow cooker with nonstick spray. Add a layer of potatoes, then ground beef, onions, cheese, and a drizzle of sauce. Repeat for 3 layers, ending with cheese.
  4. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
  5. Serve: Let sit for 5 minutes before serving. Garnish with fresh parsley if desired.
