This Bananas Foster Pie transforms the classic New Orleans dessert into a gooey, caramelized banana pie baked in a flaky or crunchy crust. Perfect for holidays, potlucks, or weekend baking, it’s rich, comforting, and wildly flavorful.
For the crust:
1 9-inch pie crust (store-bought or homemade)
Optional: 1½ cups crushed Golden Grams cereal
¼ cup melted butter (if using Golden Grams crust)
2 tbsp brown sugar (for cereal crust)
For the filling:
4 ripe but firm bananas, sliced
½ cup unsalted butter
¾ cup brown sugar
1½ tsp cinnamon
⅛ tsp nutmeg
¼ cup heavy cream
2 tsp vanilla extract
¼ tsp salt
2 tbsp cornstarch (mixed with 2 tbsp water)
Optional toppings:
Whipped cream
Vanilla ice cream
Crushed toasted pecans
Caramel drizzle
Preheat oven to 375°F (190°C).
If using a traditional pie crust, pre-bake it for 10–12 minutes until lightly golden. For a Golden Grams crust, mix cereal, melted butter, and sugar; press into a pie dish and chill.
In a skillet, melt butter over medium heat. Add brown sugar, cinnamon, nutmeg, and salt. Stir until bubbly and smooth.
Add banana slices and cook for 2–3 minutes until softened.
Stir in cream and vanilla. Once bubbling, add cornstarch slurry. Cook for 1–2 minutes until thickened.
Pour filling into crust. Bake at 350°F (175°C) for 15–20 minutes until the center is just set.
Cool completely, then chill in the refrigerator for at least 1 hour.
Serve with toppings of choice.
Use bananas that are ripe but still firm.
For extra crunch, add chopped pecans before baking.
