This avocado lime baked chicken is juicy, zesty, and perfect for a healthy weeknight dinner. With creamy avocado flavor and tangy lime, it’s a low-fiber, low-carb, and family-friendly chicken bake recipe.
4 boneless, skinless chicken breasts (about 1.5–2 lbs)
½ cup Primal Kitchen Avocado Lime Sauce (or homemade – see notes)
1 tbsp olive oil
1 tsp garlic powder
½ tsp smoked paprika
½ tsp sea salt (or to taste)
¼ tsp black pepper
Juice of ½ lime
Fresh cilantro or parsley, for garnish
Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
Pat chicken dry and place in a bowl or directly into the baking dish.
Season with garlic powder, smoked paprika, salt, and pepper.
Pour avocado lime sauce over the chicken and coat evenly. Add lime juice for extra brightness.
Let marinate for 15 minutes (or up to overnight for more flavor).
Bake uncovered for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
Remove from oven and rest for 5 minutes.
Garnish with fresh herbs and serve with a drizzle of sauce if desired.
To make homemade avocado lime sauce: blend 1 ripe avocado, juice of 1 lime, 2 tbsp olive oil, 1 garlic clove (minced), 1 tbsp chopped cilantro, ½ tsp salt, and 2 tbsp water until smooth.
