This avocado lime baked chicken is juicy, zesty, and perfect for a healthy weeknight dinner. With creamy avocado flavor and tangy lime, it’s a low-fiber, low-carb, and family-friendly chicken bake recipe.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5–2 lbs)

  • ½ cup Primal Kitchen Avocado Lime Sauce (or homemade – see notes)

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp smoked paprika

  • ½ tsp sea salt (or to taste)

  • ¼ tsp black pepper

  • Juice of ½ lime

 

  • Fresh cilantro or parsley, for garnish

Instructions

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.

  • Pat chicken dry and place in a bowl or directly into the baking dish.

  • Season with garlic powder, smoked paprika, salt, and pepper.

  • Pour avocado lime sauce over the chicken and coat evenly. Add lime juice for extra brightness.

  • Let marinate for 15 minutes (or up to overnight for more flavor).

  • Bake uncovered for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).

  • Remove from oven and rest for 5 minutes.

 

  • Garnish with fresh herbs and serve with a drizzle of sauce if desired.

Notes

To make homemade avocado lime sauce: blend 1 ripe avocado, juice of 1 lime, 2 tbsp olive oil, 1 garlic clove (minced), 1 tbsp chopped cilantro, ½ tsp salt, and 2 tbsp water until smooth.
